These Paleo cookies are so tasty and guilt free! I made this batch (after one failed batch that I don’t want to talk about…) in less than half an hour! I made 10 cookies with this recipe, but you could make them smaller and have more to nibble on.

- 4 oz almond flour (available in some Supervalus & Dunnes and health shops)
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 5 tablespoons of honey
- 3 tablespoons melted coconut oil
- 1 tablespoon of fresh lemon juice
- 1 teaspoon vanilla extract
- Almonds (optional – I just thought they looked cute! Or you could crush a handful of almonds and add it to the mixture for extra crunchiness)
Instructions:
- Pre-heat oven to 160 degrees
- Cover your baking tray with 3D non stick baking paper
- Combine all ingredients and kneed into a dough
- Roll your dough into little balls and flatten them slightly between your palms – place them onto your tray
- Press an almond in the center of each cookie (if you like)
- cook for 12 – 15 mins
- Leave to stand for 10 minutes
- Enjoy 🙂
